Cooking Corner
Apricot-Mustard Grilled Pork Tenderloin

Serves: 4
Cook Time: 15 mins.

Honey mustard and apricot preserves bring out the underlying sweetness of pork tenderloin.

Ingredients

  • 1 pork tenderloin, about a pound
  • 3 Tbs apricot preserves
  • 5 Tbs honey mustard

Directions

Season tenderloin with salt and pepper; in small bowl stir together the preserves and mustard. Grill pork over a medium-hot fire, brushing with mustard mixture frequently, turning once or twice, until just done, about 15 minutes. Try experimenting with fresh apricot compotes. Serve over a bed of fresh summer greens. (Recipe courtesy of the National Pork Board)
